Summer Salads

Potato Salad & Chicken Salad

Warm breezes, a glass of lemonade or Ice tea on your table next to a plate of organic chicken salad & creamy potato salad, do I need to say more? 

One of the many benefits of being a Chef and owning your Personal Chef company is being able to create new ways to improve your own recipes.  

The pics above are just that, I was craving something creamy and something salty and I started thinking to myself what could I put together to satisfy that hungry craving I was feeling. 

I started thinking which is hard when you are hungry but thought how about a combination plate of two of my personal favorites.

I got out my handy little mixing bowls grabbed a can of organic white chicken breasts meat chunks added a dash of white wine vinegar, a 1/3 cup of mayonnaise, a dash of sea salt, and a 1/4 cup of crasinens, mixed in a 1/3 cup of sliced red onions and mixed everything together to taste.

Now the second thing on this same plate is my famous potato salad, now I say famous because I have been told Elvis would of Loved this salad if his spirit ever comes back to Minnesota again, LOL. 

Now of course I couldn't wait for that to happen so I mixed my self up a small batch of salad added a dash of caraway seasonings to it, a dash of dill weed, some sea salt to taste, a 1/4 cup of white wine vinegar, and 1/3 cup of mayonnaise, added about 1/4 cup of half and half put all ingredients in a mixing cup stir it and poured this over the sliced potatoes salad, added a 1/2 sliced red onion and a bit more sea salt to taste and served myself a big helping of Yum. Now I used Idaho potatoes about (6) mediums ones so that should help you get it right, if you want more salad just add more of the above mix so it is wet but not soggy.

I had made enough of both to have for a couple of days worth of Summer light lunches, now I don't know about you but Summer doesn't get any better than this.
