Stuffed Pepper Soup!!

"Stuffed Pepper Soup"

This weeks recipe from Divadish Kitchens is Stuffed Pepper Soup.

Chef Gianna E. Ianos took this from the Italian  side of her Heritage and put together this hearty soup that will make your toes curl up in sheer pleasure and satisfaction!

Ingredients:
1lb 80% lean ground beef
2 md. bell peppers, chopped (Use the Sweet Bells tastes better)
1 c finely chopped onion
1 can (29 oz. of Hunt's diced tomatoes or (2) 15 oz cans)
1 can 15 oz. of Hunt's tomato sauce
1 6oz. can of Hunt's tomato paste
1 26 oz. can of Garlic & Herb Hunt's tomato sauce
20 oz. of Beef Broth
1tbsp. of Thyme
1 tbsp. of Sweet Basil
2 tbsps. of Italian Seasonings
1tbsp. Garlic Powder
1/2 tsp. of Fennel seasoning
Dash of Red Pepper flakes
4 oz. of Grated Parmesan cheese added to sauce

Directions:
In large skillet add 2-3 tbsps. of olive oil and a dash of garlic powder swirl together and slowly heat up.
Add ground beef and brown,add onions,and cook till onions are translucent.
Drain this and  add to the crock pot.
Add all the rest of above ingredients to crock pot and stir to everything is mixed in.
Cover and slow cook for 3-4 hours.

When this is almost done App. last 1/2 hour of cooking left add (2+) cups of cooked Brown Rice
Mix in till all rice is covered in red sauce mixture.

Serve Hot with grated Parmesan cheese & crumbled Feta.

Full meal would be to add a Deluxe Italian Salad & some Artisan Crusty Bread with Garlic Dill Butter.

This soup freezes very well, if there are any left-overs.....!
