Gluten -Free Stuffing!

                                                          Brown Rice Cranberry & Pecans Stuffing

                                       Delicious does not even come close to describing this gluten free stuffing recipe.

I am a Big Bread Stuffing eater, but a recent client asked for something gluten free and so I scoured my recipes did not have a single one! So I went on line to find this one, I did make a few changes to ingredients and did a beef stock instead of a chicken,I was more than pleased with the results.It came out moist, the texture combinations were Wonderful, and the semi sweet with a touch of tart was absolutely out of this World... I mean Cosmic out of this World!

So here is  what I did, now remember this is my revamped version, I do that a lot when I find recipes, making them my own, you may choose to do the same in some form too!

Recipe:
1 cup brown rice
1/2 cup dried cranberries
1 tsp. dried orange peel ( I used fresh)
1/2 cup of chicken stock ( I used beef broth )
1 tbsp. of margarine (I used butter)
1/2 cup of celery, finely chopped (I used 1/2 tsp. of Celery Salt)
2 tbsp. shallots, finely chopped (I used 1/2 white onion)
1 tsp. of poultry seasoning
1/2 cup of toasted pecans ( I used 3/4 cup chopped)
1/4 cup fresh parsley (I used Dried)
salt & pepper to taste, not necessary.

Preparation:

Prepare rice according to package.( if it is not instant brown rice it will take app 15 min. in microwave to cook.)

In medium micro wave bowl, mix cranberries, and orange peel with stock and microwave on high for 2 min.
Set aside.

Heat large skillet add butter and onions poultry seasonings, and celery salt simmer (saute) 3 min.

Stir in cranberries,orange peel,beef stock, pecans, parsley and rice into this mixture over medium heat till all liquid is absorbed turning the mixture so it does not burn or stick.

Pecans can be toasted @ 350' oven for 5 min. Be careful not to burn them. Cool and chopped them for above mixture.

So there you have it folks, a really delicious Non-Bread stuffing recipe, that is DIVA APPROVED!
